Hot cacao nibs fudge recipe

My husband has a bit of a sweet tooth. I am always on the lookout for a way to turn a tasty treat into something with health benefits. Since summer is currently in full swing, we have been eating a lot of ice cream around here. I decided turn the back of my pantry into a warm cacao nibs fudge and give our ice cream a nutritious bold favor.

There are numerous health benefits of cacao nibs. Cacao nibs are high in antioxidants, iron, magnesium, and fiber. They also have a unique nutty flavor with a bit of a bite at the end. This recipe fulfills my purpose of adding high quality nutrition into a tasty summer treat.

Homemade cacao nibs fudge is a great way to add a superfood to a yummy summer staple like ice cream. Cacao nibs are high in iron, magnesium, and fiber so you can take a little bit of guilt out of sweet treats.
I ordered cacao nibs a long time ago from amazon after reading how nutritious they are. Cacao nibs aren’t a normal staple food in my house so I really had no idea how to use them. Needless to say, they have been in the back of my pantry for a while looking sad and unused. I got inspired to find ways to incorporate this superfood into our diet (and also to clear some pantry space) so I am working on a recipe series all about cacao nibs! This cacao nib fudge recipe is the first of many I will be posting.

Cacao Nibs Fudge

This recipe does not contain sugar. I know what you may be thinking, “hey wait a minute, fudge should be sweet.” Well don’t worry it is!

I just love using honey to replace sugar in my recipes because it doesn’t raise your blood sugar as quickly. Honey also contains antioxidants and minerals that are vital to human life which makes it more nutrient dense than sugar.

For this recipe you will need the following ingredients:

First, grind the cacao nibs in a food processor or coffee grinder until fine.

Then place all the ingredients in a small pot and turn the stovetop heat on medium low. Stir occasionally until the pan starts to heat up. Once the heat is distributed in the pan, you will need to stir continuously so the fudge doesn’t burn or it will be bitter.

This process, like making any fudge is a labor of love as it takes about an hour of continuous stirring for the fudge ingredients to melt together and condense to a thickened texture. I promise it will be worth it!

You will notice that the cacao nibs can be stubborn to melt. This is why it takes so long to get the right consistency.

After the cacao nibs are melted and the fudge has a thick consistency, pour the warm fudge over your ice cream and enjoy guilt-free!

This is my little spin off conventional hot ice cream fudge so we can enjoy a treat but still add value to our bodies.
